About your Instructors: James Bryant has been engaged in the study of mushrooms for the last 5 years. As the sous chef at Asheville’s eclectic wine bar “Leo’s House of Thirst”, he was inspired to incorporate the naturally occurring fungi found in the NC region into his dishes. This interest grew into a passion to begin cultivating his own varieties in a home lab setting. In no time, he outgrew a one room operation and began partnering with Small Holding Farm in Morganton to create a larger scale production, in hopes to provide mushrooms to local vendors and restaurants in the state. James Bryant will be assisted by licensed forager Joey Morney to lead mushroom enthusiasts in the art of cultivating, caring for, and reproducing mushroom varieties from the comfort of their own home
