Nightfall of Diamonds

A moravian cookie-style imperial stout mashed with Mrs Hanes cookies and conditioned on cinnamon, clove fresh ginger and nutmeg.

Created in collaboration with our good friend Matt at Stella Brew in Winston Salem North Carolina. Also celebrating his 10th year in business, this project couldn’t have come at a better time. Mashed with a base of local barley malt and injected with a decadent blend of the finest caramel, chocolate and roasted malts. For good measure, we tossed in heaps of the world famous Mrs Hanes ginger crisp moravian cookies. Boiled with brown sugar and local sorghum molasses, ingredients that we don’t typically use in our stout program. Fermented with our preferred stout yeast strain for an unbelievably thick body and luxurious mouthfeel. Conditioned on some of the same  spices used in the cookies themselves which include cinnamon, clove, nutmeg and finished with local fresh ginger courtesy of Rayburn Farms of Barnardsville, North Carolina.  

With a rich demographic of people from Moravia (Czech Republic) in the Winston Salem area of North Carolina, their food and customs have undoubtedly had a profound effect on the region. One of those many influences is by way of food in the form of paper thin and ginger spiced cookies. Using those cookies as inspiration along with actually using those cookies in the mash, Matt helped us understand a bit more about Moravian culture and the cookies that have developed quite the cult following. Rich and luxurious and perfectly spiced, this imperial stout is the perfect liquid cookie treat.
