’23 Three Year Blend

an appalachian gueuze-inspired three year blend of spontaneously fermented ales from the winters of 2019, 2020 and 2021.

This is it, y’all. This is everything. Do y’all see us? This is the culmination of many minds and many hands over the course of many winters. With gratitude and humility, we proudly present our second ever three year blend of spontaneously fermented ales.  

For us, one of the most captivating styles of beer and methods of production and fermentation is the Belgian-style lambic. Created from 100% spontaneously fermented beers, they were certainly not the first to make beer this way but they were the first to romanticize and perfect the process. Perhaps the biggest achievement within this style of beer is the three year blend, also known as a gueuze. Traditionally blended from three years of spontaneous stock and then conditioned for another year inside the bottle, this style is patience and perfection in a glass.

Mashed in the turbid method with local pilsner malt and local/heritage raw wheat until the milk runneth clear. Boiled extensively for maximum color achievement with aged whole leaf hops for proper bitterness. After the boil, this wort was transferred to our coolship, sitting open on our farm, on a cold winters evening. The wort was left there to cool overnight and in the morning, was transferred into a square tank for primary fermentation. With nothing other than the natural airborne yeasties and bacteria which inoculated the wort, this is the true magic of spontaneous brewing. After primary fermentation, this beer was then transferred into neutral oak barrels for extensive slumbering. Bottled back in the spring of 2023 and allowed to condition naturally inside the bottle and keg for 7 months upon its release. 

 Boasting notes of green peaches, grapefruit pith, lemon verbena, pickled mango chutney and kalamata olives with undertones of herbal bitterness and swaths of oaky-derived vanilla. An alluring acid-forward aroma bursts out of the glass and is subtly present in the first sip but is followed by assertive bitterness long into the finish.
