Mixed-Culture barrel-aged Saison with locally foraged Dandelion flowers, conditioned on brettanomyces
Mixed-Culture saison mashed with local barley, rye and wheat. Fermented with our
mixed house cultures until bone dry. Transferred into wine barrels for a brief maturation
period. Blended out of the barrels onto a different barrel aged clean and crisp saison.
Aged additionally on locally foraged dandelion flowers. Conditioned naturally inside the
bottle and keg with brettanomyces yeast.
