Brewed in collaboration with the oh-so-talented Tara Jensen of Smoke Signals Bakery of Marshall, North Carolina.

Mashed with WNC pilsner and wheat, raw red fife wheat from Red Tail Grains and country-style wheat bread loaves courtesy of Smoke Signals Bakery. Steeped on heaps of locally foraged birch branches. Fermented with our mixed house cultures. Naturally conditioned inside the bottle.
For this kvass adventure, Tara helped us move away from the idea of a traditional rye kvass. From that, no rye was used in this kvass. However wheat, in a number of forms, made up the soul of this bread-based thirst quencher.
