Packaging Specialist 

THE BIG PICTURE

Packaging Specialists are responsible for assisting in the bottling and kegging, storage and maintenance of our beer. Additionally, they may play roles in cellaring and cleaning when needed. Packaging Specialists will report to the Head Brewer. Candidates must share Fonta Floras’ commitments to quality, safety, business ethics, continuous innovation, local agriculture and our own unique culture.

ERRDAY

– Assemble boxes prior to bottling

– Packing case trays or boxes

– Palletizing filled kegs and boxes in conjunction with Delivery Specialist and/or Brewery Manager

– Bottling beer on a 6 head, manual, gravity-style bottling line

– In coordination with Head Brewer, schedule the delivery of new labels

– Inventory and report to Head Brewer/Brewery Manager quantity of wax, keg collars, keg caps, empty kegs and empty bottles

– Operate a forklift to transport pallets between buildings

– Labeling bottles

– Wax dipping bottles

– Monitoring quality control on finished labeled and waxed bottles

– Cleaning and maintaining the bottling line and packaging work area

– In coordination with a brewer, follow strict SOP’s to dose tanks prior to packaging with yeast nutrient, dextrose and yeast for bottle conditioning

– Checking CO2 levels with appropriate instrumentation on forced carbonated beers prior to packaging

– Checking CO2 levels with appropriate instrumentation on bottle conditioned beers post packaging

– Log and report collected CO2 data to the Head Brewer

– Clean and properly store kegs

– Clean and sanitize keg cleaning lines prior to and post kegging

– Properly mark/identify filled kegs with appropriate collars

– Inventory bottles and kegs and log and report data to Head Brewer, Brewery Manager and Delivery Specialist

– Work with Head Brewer and Delivery Specialist on distribution strategy and product availability

– Maintain an orderly and safe work environment within department as well as entire facility

– Participate in regular departmental meetings to review issues and propose solutions

– In coordination with a brewer, follow strict SOP’s to clean the brite tanks/fermenters post packaging

– Be a team player with ability to interact with all levels within the organization

– Safely handling cleaning chemicals, and using the prescribed amount for each task

– Preparation of an endless array of ingredients bound for beer

– Attend and professionally represent the Fonta Flora brand at in-state and out-of-state events as needed

– Other tasks as needed

DESIRED SKILLS AND EXPERIENCE
– Must be 21 years of age or older at the time of application

– Able to pass a post-offer, pre-employment background check

– Prefer a minimum of 1 year previous experience in a brewing/manufacturing environment

– Extreme passion for craft beer and the desire to learn

– Prefer Previous Forklift experience

Strong work ethic and self-starting attitude
– Good interpersonal skills and team spirit

– The desire to work in a fast-paced, growing company

– Genuine enthusiasm for craft beer

– Willingness to regularly work during evenings and weekends

PHYSICAL AND MENTAL REQUIREMENTS

– Able to stand for prolonged periods of time

– Able to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs

– Able to manipulate valves and clamps

– Able to read and follow written English instructions

– Able to regularly lift/carry 44 pound boxes

– Able to regularly lift/carry 55 pound bags above waist level

– Able to periodically lift/move 165 pounds

– Able to work in a factory/production environment which may be loud, slick, humid, and hot

– Able to work in indoor and outdoor environment with moderate noise, sometimes slippery floors

– Able to comply with safe chemical handling procedures, including personal protection equipment such as gloves and goggles

ABOUT FONTA FLORA BREWERY

 Fonta Flora Brewery integrates the soul of agriculture with the artisanship of zymurgy to create a menagerie of rustic and savory libations. In business for four years and counting, we take pride in the utilization of local agriculture and foraged ingredients in the creation of our beers on a very manual 3.5Bbl PKW brewing system and a new 15Bbl PKW brewing system located on Whippoorwill Farm, an historic dairy farm near the banks of the Linville Gorge.

 

Assistant Brewer 

THE BIG PICTURE

The assistant brewer at Fonta Flora will assist in the day-to-day operations of our brand new, 4 vessel, 15Bbl brewhouse and our original 3.5Bbl location. In coordination with the Head Brewer and Head of Brewing Operations, the assistant brewer will help with brewing, cellaring, packaging, and cleaning. As working with a very small team, this person should expect to take on a myriad of tasks, no matter how large or small. This person will report to the Head Brewer and ultimately to the Director of Brewing Operations and will follow brewing procedures and recipes established for and approved by Fonta Flora Brewery. Candidates must share our commitment to quality, safety, business ethics, philosophy and agricultural roots.

 

ERRDAY

– Ability to safely lift 50-55lb grain bags into our mill.

– Ability to safely lift up to 44lb bags of hops into the tops of 30Bbl fermenters.

– Ability to safely climb a ladder and add ingredients into 30Bbl Fermentation Vessels and Brite Tanks.

– Milling up to 1,000 pounds in 50-55lb bag increments, in accordance with a brew/recipe sheet.

– Wort production and hopping, on both our 3.5Bbl and 15Bbl system, to correct sugar and hop concentrations as dictated by the recipe/brew sheet.

– Familiarity with cereal and turbid mashing techniques.

– Extensive knowledge in alternative ingredients used in brewing a plethora of Fonta Flora beers.

– Filling out brew logs, noting any discrepancies, formulating recipes, and performing associated math equations.

– Able to troubleshoot mechanical issues and perform basic preventative maintenance of brewing equipment (pumps, VFDs, grain transfer systems, etc.).

– Dry hopping the prescribed amount of hops to a designated fermenter via the top port of the tank.

– Yeast management, including the harvesting and/or pitching of yeast from the prescribed fermenter/brink while following sanitary procedures.

– Following established CIP procedures to clean the brewhouse, fermenters and brite tanks.

– Safely handling cleaning chemicals, and using the prescribed amount for each task.

– Applying the correct pressure and volume of compressed CO2 gas to brite tanks for carbonation and displacement of beer as it is being packaged.

– Serving as a representative as needed to discuss our beer and brewing methods at events hosted on site as well as in North Carolina, out-of-state and international events.

– Regularly hosting tours for vendors, distributors, and accounts through our brewing operations.

– Other tasks may be assigned as needed.

Part Time Bartender 

Must have flexible night hours and weekend availability. At least 1 year the service industry required – with a strong interest in craft beer. Must be 21 years or older to apply. We do require all bartenders to complete a Certified Beer Server Exam through the Cicerone Certification Program – which would be compensated for after 3 months of continued employment.
